Disney World: the very words evoke happy memories in my mind. However, the first time I returned to Disney World after I began the gluten-free diet, I was initially apprehensive about eating there. Would I be assured of a gluten-free meal? Would there be something for me to eat besides salad? Then remembering how solicitous Disney World always was of its guests when we had visited in the past, I had no doubt that I would find celiac-safe food to eat. New Orleans is awash in exceptional venues, extraordinary jazz music, and an eclectic mix of people. It is the excellent restaurant scene, though, that makes this city a draw for many travelers. Yet as I set off for my initial visit to New Orleans, I couldn't help but feel a bit like Dorothy from The Wizard of Oz as she made her way down the Yellow Brick Road to the Emerald City. In place of her familiar refrain of “Lions and tigers and bears, oh my!”, I substituted my own set of fears: po'boys, and gumbo, and beignets, oh my!
