Defensive Dining – South Padre Island – Travel Ideas – Using Pre-Made Gluten-Free Foods

There is one more tip I would like to share with you about our recent trip with eight people, most of us gluten intolerant. We arranged in advance for Chef Marissa to prepare some selected items that would freeze well. We ordered stuffed bell peppers, chicken breasts stuffed with spinach and feta, and some of her famous black beans. Next I called The Little Aussie Bakery to order our favorite buns, which were then pre-sliced and bagged. These were all frozen in advance and then put in a cooler to transport to the beach house, which was a 4-5 hour drive.

It was great to finally arrive and have something we could thaw quickly, add a salad, and have supper. Or we had “Rita buns” to make toast and sandwiches. We used these items over the next few days, adding pasta, rice, and vegetables to create a full meal. This idea could be used for when you have a lot of house guests too, but the idea of going to a place with a kitchen and having pre-arranged food was very helpful to us.
