Defensive Dining – San Antonio – Gluten-Free Pizza – Boston’s The Gourmet Pizza

Boston’s Pizza has been on 1604 near 281 for about three years. This national chain has recently added gluten-free pizza to their menu after learning about gluten-free procedures from the supplier of the gluten-free crust. They get their crusts from French Meadow Bakery, who advised that their locations should purchase new cutting boards, knives, and all utensils used to prepare gluten-free pizza to avoid cross-contact.

Boston’s have about thirteen choices for you. They charge $2.00 extra for the gluten-free pizza. The marketing manager, Harold Hoenow, told me that he and Susan Stoval, the owner, have trained their staff to avoid gluten contamination.

The pizza crust is also casein free but does have egg whites and soy lecithin, if these are a problem for you. They do not offer casein-free cheese but will make your pizza without cheese if you order it that way.

I asked further questions about other items on the menu but found that they do not have the ingredient breakdown at this time. After talking to their national chef who put all the nutrition details on their Web site, it became apparent that the rest of the menu has not yet been appropriately screened for hidden gluten in the ingredients. I strongly urge you to limit your choices to gluten-free pizza for now. (AB July 2009)
